Could these be the best smoked salmon pancake recipes… ever?

Eggs and flour at the ready as Pancake Day (25 February) is only around the corner. And although we’ve said it before, we’ll say it again: Pancake Day doesn’t just have to be about a squirt of lemon and a sprinkle of sugar, or chopped bananas and syrup. No, Pancake Day is just another excuse to widen your smoked salmon pancake recipe repertoire and discover some delicious savoury pancake recipes.

 

So, in our bid to give sugary pancakes the elbow and savoury pancakes the credit they deserve, here are our two favourite Scottish smoked salmon pancake recipes for 2020.

 

  1. Pancakes with smoked salmon and shrimp

 

Serves 4

 

For the pancakes:

 

  • 125g plain flour
  • 1 x teaspoon of cream of tartar
  • ½ x teaspoon of bicarbonate of soda
  • 1 x egg
  • 115ml milk
  • ½ x teaspoon of butter

 

For the topping:

 

  • 200g John Ross smoked salmon (separated into 15 – 20 slices)
  • 100g Saint Agur cheese
  • 1 baby gem lettuce
  • 1 x lemon cut into four quarters
  • 25g brown shrimp
  • Red onion jam

 

Method

 

Beat the egg in a cup and then sift the flour, cream of tartar and bicarbonate of soda into a bowl. Combine the two until the batter becomes thick and creamy – but not too thick. Use the milk to thin. Mix well.

 

Grab a pan and heat with a splash of oil. When hot, drop four spoonfuls of the mixture onto the pan. You’ll know when to flip the pancakes, as bubbles will form. When cooked, place each of the four pancakes on separate plates.

 

First, add the smoked salmon, making sure that each pancake is covered in a generous helping. Rest a leaf of the baby gem lettuce on top of each before sharing the Saint Agur amongst each lettuce, adding a little red onion jam and brown shrimp. Sprinkle with cracked black pepper and serve with the lemon wedge.

 

  1. Smoked salmon pancakes with spinach and herbs

 

We first came across this one on the website of one of our customers – Waitrose. It sounded so good that we had to share it. However, as always, we’ve tried to give it a John Ross twist.

 

Serves 4

 

Ingredients

  • 100g plain flour
  • 300ml milk
  • 2 x medium eggs
  • 50g butter
  • 50g spinach
  • Handful of freshly chopped herbs including coriander, basil and parsley
  • 200g John Ross Traditional Smoked Salmon
  • 125g soft cheese
  • Spoonful of chopped chives (to serve)

 

Method

 

In a food processer, blitz together the pancake batter ingredients, spinach and herbs.

Heat a large frying pan and pour in the batter. Flip and cook the other side. Place on a plate when cooked and repeat, with three new plates.

 

When cooked, spread the cream cheese on each pancake and place the smoked salmon on top. Sprinkle each one with chopped chives and roll, before cutting each pancake into ‘sushi slices’ and serving with cracked black pepper and a wedge of lemon.

It’s Pancake Day, and for that very reason those who buy smoked salmon owe it to themselves to go ‘beyond the blini’ and go the whole hog.

 

Let’s face it, there are 364 days to enjoy smoked salmon blinis – and they’ve become so ubiquitous that it’s sometimes hard to appreciate them. There’s only one Pancake Day.

 

For the purposes of this very short blog we’re going to focus on the blini’s big brother – the standard, toss-able and large pancake. And what better way to do this than to offer you our favourite smoked salmon pancake recipe for 2018.

 

The good news about this savoury pancake recipe is that it is:

 

  1. a) Traditional pancake size
  2. b) Substantial enough to have for tonight’s dinner
  3. c) A WeightWatchers recipe, so healthy and tasty in equal measure

 

Have pancake-making fun tonight. We will be.

 

Avocado, Rocket and Smoked Salmon Pancakes

 

This recipe serves four, so if you’re only making for two you can either halve the contents or use the remaining mixture for tomorrow’s breakfast.

 

Ingredients

 

  • 200g John Ross Jr smoked salmon (you can find this pack in Waitrose)
  • 110g plain white flour
  • A pinch of salt
  • One egg
  • 275ml skimmed milk
  • 5 spays of cooking oil spray
  • 1 avocado, sliced
  • A handful of rocket
  • 4 tbsp fat free natural fromage frais
  • 1 tbsp dill, chopped
  • Pinch of black pepper
  • 1 lemon (quartered)

 

Method

 

Select a mixing bowl and sift the flour into it before adding the milk and egg and beating with a whisk until smooth.

 

Grab a large non-stick frying pan, spray with oil, and place on the heat. When hot, add the batter mixture and thinly cover the pan. Cook until it has set and then flip – or toss – over to cook the other side. Once you’ve made four (or two) keep warm and then place on warm plates ready to serve.

 

Share the smoked salmon out. If you are only making two then 100g of Scottish smoked salmon each is even better! Share the avocado amongst the pancakes and then add the rocket.

 

Add one tablespoon of fromage frais on top and sprinkle each dollop with dill. Finally, sprinkle the pepper all over each pancake and serve with the lemon on the side.

Thin Crepes Stuffed with Smoked Salmon

Pancake Day is upon us and whilst many will still opt for a sprinkling of sugar with lemon juice, or reach out for the banana and chocolate spread, we believe that when it comes to pancakes, savoury is the new sweet.

 

Of course, we at John Ross Jr aren’t saying that sweet pancakes aren’t good – most of us are partial to the odd (and maybe not so odd) sugary treat but savoury pancakes not only make a meal in their own right, which means that parents can half their culinary workload by integrating it into dinner time, but they’re also incredibly tasty, too.

 

So, in true John Ross Jr blog tradition, we’ve rounded up our top two smoked salmon pancake dishes for your Shrove Tuesday satisfaction.

  1. Tea smoked salmon and chive pancakes

 

With the perfect balance of flavours, this great recipe makes a healthy meal in less than 30 minutes.

 

Serves 3

 

Ingredients

 

  • 3 large handfuls of salad (one for each portion)
  • 6 slices of John Ross Jr’s Tea Smoked Salmon
  • 1 lemon cut in half
  • 4-5 chives – finely chopped
  • 50ml olive oil
  • 2 eggs
  • 70g plain flour
  • 1 tablespoon of wholegrain mustard
  • 125ml milk

 

Method

 

Firstly, get the dressing out of the way by mixing the mustard, oil and a dash of lemon juice in a bowl.

 

Then make the pancake mixture my mixing together the egg, milk, flour and, in this case, the chopped chives. Once prepared, make the pancakes as you would do normally until you’ve made all three pancakes.

 

Get your plates ready, garnish with the salad, fold the pancakes and place next to the greens before laying down a couple of smoked salmon slices over the pancakes and garnish. Season with salt and pepper (and a twist of lemon) as required.

 

  1. Whisky Smoked Salmon pancakes with Avocado and Rocket

 

Another easy to make and delicious recipe – after all, how can you go wrong with a pancake.

 

Serves 2

 

Ingredients

 

  • 55g plain flour
  • 1 small egg
  • 135ml milk
  • 1 teaspoon of olive oil
  • 200g John Ross Jr’s Whisky Smoked Salmon
  • 1 avocado (sliced)
  • 2 portions of rocket
  • 2 tablespoons crème fraiche
  • Chopped dill (to garnish)
  • 1 lime

 

Method

Mix the flour and a pinch of salt into a bowl along with the egg and milk. Mix until smooth. Place the olive oil in a heated pan and once hot, make the pancakes using your preferred technique.

 

Once cooked, place the pancakes on the plates and divide the pack of Whisky Smoked Salmon among them along with the sliced avocado and rocket. Add a dollop of crème fraiche to each plate, garnish with dill and serve with the fresh lime.
