Smoked salmon breakfast waffles

Serves: 4

Ingredients

  • 4 waffles
  • 200g pack of John Ross Traditional Smoked Salmon
  • 4 eggs
  • 2 ripe avocados
  • Lime juice (2 tablespoons)
  • Chilli oil
  • 2 Spring onions (diced)

Preparation method

  1. Place the eggs in a pan of simmering water and cook for 5 minutes (for soft boiled). Cool under running water and peel carefully
  2. Peel, de-stone and slice the avocado before tossing in the lime juice to prevent browning
  3. Toast the waffles and place one on each plate
  4. Slice the eggs in half and top the waffles with eggs, avocado slices, smoked salmon and spring onion
  5. Finish with a generous drizzle of chilli oil and a sprinkle of salt and pepper
