Smoked salmon breakfast waffles
Serves: 4
Ingredients
- 4 waffles
- 200g pack of John Ross Traditional Smoked Salmon
- 4 eggs
- 2 ripe avocados
- Lime juice (2 tablespoons)
- Chilli oil
- 2 Spring onions (diced)
Preparation method
- Place the eggs in a pan of simmering water and cook for 5 minutes (for soft boiled). Cool under running water and peel carefully
- Peel, de-stone and slice the avocado before tossing in the lime juice to prevent browning
- Toast the waffles and place one on each plate
- Slice the eggs in half and top the waffles with eggs, avocado slices, smoked salmon and spring onion
- Finish with a generous drizzle of chilli oil and a sprinkle of salt and pepper
