  • 2 eggs
  • 1 large ripe avocado
  • 2 Portobello mushrooms
  • 5 medium tomatoes
  • 200g pack of John Ross Traditional Smoked Salmon

Preparation method

  1. Pre-heat oven to 180°C
  2. Slice the tomatoes in half and place on a baking tray with the mushrooms
  3. Season well and drizzle with olive oil before roasting for 15 minutes
  4. Whilst the mushrooms and tomatoes roast, halve, peel and finely slice the avocado
  5. Divide the avocado and the smoked salmon between two plates
  6. Gently fry the eggs in a little oil
  7. Plate the tomatoes and mushrooms, and finish with the eggs
