            Mini jacket potatoes with hot smoked salmon, sour cream and chives

                    Ingredients
                    
- New potatoes
- Tub of sour cream
- Fresh chives, finely sliced
- Zest of one lemon
- 160g pack of John Ross Kiln Roasted Salmon with Honey and Mustard Seeds
 
                
                    Preparation method
                    
- Pre-heat oven to 180°C
- Place potatoes on a large tray and bake for 30 minutes
- Once the potatoes are tender, cut a deep cross in each one and pinch open before placing on a serving platter
- Spoon sour cream over each potato
- Top with flakes of kiln roasted salmon and finish with the chives and lemon zest
