Celebration Smoked Salmon Launched for the Coronation Festival

02/05/2013
By Christopher Leigh, Master Smoker, John Ross Jr

Here at John Ross Jr we’re very excited to be launching a limited edition Original Classic Smoked Salmon for the Coronation Festival - a four-day gathering of selected Royal Warrant holders at Buckingham Palace staged to celebrate ‘The Best of British’.

Our Original Classic Smoked Salmon is available for just eight weeks in the summer (mid-June to mid-August) at independent outlets throughout the UK, at Waitrose stores or you can buy our very special smoked salmon online at www.johnrossjr.com. This scrumptious creation, which also celebrates 150 years of smoking salmon, is available at £5 for 150g and comes in exclusive gold packaging specifically designed to coincide with the Festival, which takes place on 11 – 14 July 2013.

The celebratory smoked salmon incorporates some very special flavour-enhancing techniques used since the turn of the century. The majority of these preparation methods are still used today, however, a few secret elements have been saved specially for this limited edition, including marinating the salmon in Demerara sugar and dark rum and coating the salmon in a sealer - all designed to retain moisture and flavour. Every whole smoked salmon is still individually hand pin-boned, dry salt cured and hung and cold-smoked in historic traditional brick kilns for up 24 hours over a blend of oak and beech wood chippings.

Christopher Leigh, John Ross Jr’s Master Smoker and Director, explains: “To celebrate the Coronation Festival and our 25 years as a Royal Warrant Holder we wanted to go back 150 years to honour our founding smoking methods, the majority of which we still use today. The Original Classic Smoked Salmon uses rum and molasses to deliver a unique flavour and pays homage to how our smoked salmon was originally prepared in the 19th century. We’re delighted to go back to our roots by bringing our secret recipe to life and what better place to officially launch it than in the Royal Gardens of Buckingham Palace.”

The smokehouse, which was awarded the Royal Warrant in 1988, will join other prestigious brands and fellow Royal Warrant holders in the gardens of Buckingham Palace including Moet & Chandon and Bentley.
