Scallops ceviche

When asked for the best way to serve smoked salmon we always tend to favour the ‘less is more’ approach. We apply this same approach to scallops – or, in the case of John Ross Jr, Scottish King Scallops.

Plump and juicy, our scallops are caught on small Scottish fishing boats from the Scottish coast. So, what do you do with them? If you’re looking for a delicious scallops recipe, this starter is perfect for that special dinner party. It’s fantastically simple to make and tastes absolutely divine.

Cut each of the king scallops into four pieces.

Lay each piece in a wide bowl so that every slice can be exposed to the remaining ingredients.

Then add the lime juice, the sugar, the chilli and a generous helping of salt before very gently mixing the scallops so that they’re all covered in the ‘marinade’.

Cover and leave in the fridge for around 45 minutes to an hour.

When ready to eat, drain the juice into a small jug, arrange the scallops on plates and then trickle the juice over each portion.

Finely chop the mint and lightly sprinkle over each portion before serving.
